Rum: Belmont Farm Kopper Kettle Dark Chai Spice
Kopper Kettle Chai Spiced Rum uses a «sugar mash» (as opposed to molasses as is popular in the Caribbean). It is sweetened with brown sugar and flavored with east Indian spices («chai»). It is bottled at a heady 96 proof (compare to many spiced rums at 70 or 80 proof). This can be sipped neat or use it to give a spicy kick to your favourite rum cocktail.
