Maria mezcals are named for the Dona Maria Chagoya distillery in Oaxaca that craft their spirits from 100% espadin agave. Agave is cooked in stove ovens heated by wood fire and then fermented in wooden tubs. Maria Anejo mezcal is aged for 1 year in oak.
