The tale of tequila is a long and fruitful one full of passion and misunderstandings. Originally the symbolic spirit was called Vino-Mezcal de Tequila, and shared the same timeless processes with mezcals such as cooking in earthen pit ovens, hand-maceration, fermentation in wood, and distillation in wood distills. Producers successfully squeezed the most expressive flavors from the fruitful Tequilana Weber, or blue agave, before facing it’s biggest turning point; it’s standardization. After years of contempt beginning in the late 1800s, tequila began to gain popularity around the world and more efficient processes for mass production were implemented.
